Nepali Curry

Lentil Curry

Nepali Dal Bhat or Dahl Bhat, is a dish made of lentils and rice. It is considered to be the national dish of Nepal. One can see how this comforting combination of flavors and heat, would be perfect on a cold day. The rice or bhat is either boiled or steamed. It is often served in the middle of the dish and surrounded by the dal/lentils and perhaps some other curries, achar’s or chutney’s. This is easy to make and the dal has all the flavors of Nepalese cuisine.

Vegetable Curry

Tarkari is a traditional Nepali curry, commonly served alongside dal bhat. Like many Nepali recipes, this one is rich in spices, both savory and a little bit of sweet. These cooked vegetables can be adapted to use any type of veggie ingredient and usually features potatoes, cabbage, carrots, tomatoes, green beans or peas. It is a fairly simple curry that is not too spicy but tastes delicious, especially alongside a serving of rice.

Chicken Vegetable Curry

Though it usually refers to vegetable curry, the word "tarkari" can describe any number of variations of vegetable curry. Another iteration of it is chicken tarkari, similar to butter chicken curry, and served over a creamy, gingered tomato sauce that is seasoned with traditional curry spices. You can add or remove as many vegetables as you want, following the same simple method of cooking the tarkari but with the addition of marinated chicken.
